PREMIUM GIN

With the right equipment, like the top of the line stills installed at our Distillery, the creation and production of gin is relatively easy. The difficulty is in producing something truly memorable. With our Premium Gin, we didn't just want to add another gin to the ever-increasing heap of bottles lining the shelves of your local spirits shop. We wanted to make a gin that would be equally at home in an icy-cool Gin and Tonic and that could simply be enjoyed neat or over ice.

To create our Premium gin, we looked for ingredients and flavours from all over the world. The goal was to produce a well-balanced and classical gin, with a long finish and a pleasant sweetness.

This process took almost a year as our Master Distiller went through countless iterations and tests before finally landing on our award-winning recipe. The result of this exacting process is a bold and aromatic gin that can be enjoyed neat, over ice, or in cocktails.

The Gin that likes to be cold

When trying our gin for the first time, many people are struck by the frosty translucent veil that forms when it is poured over ice. Essentially when our gin is exposed to the cold, its flavour becomes visible. The essential oils in our botanicals are so concentrated that sometimes a simple change in temperature or the addition of water makes it possible to visualize the flavours, a white veil reminding us of the beautiful white snow in Quebec.

 

For us, the veil is not only normal but expected. It is a token of quality.

CDS Premium Gin

Tasting Notes

  • Appearance: Crystal clear with a slight opalescent clouding from the addition of a splash of spring water, signaling the beautiful essential oils contained inside the gin.

  • Aroma: Immensely complex notes of woody pine and forest grove, coupled with exotic notes of lime peel, cardamom, and savory rosemary.

  • Flavor: The aromas carry over to the palate with a rush of floral notes. The finish is long and smooth with a slight sweetness.

Cocktail Recipes

Negroni

  • 1 oz (30 ml) Distillerie CDS Premium Gin

  • 1 oz (30 ml) Light Italian Vermouth

  • 1 oz (30 ml) Campari (or similar)

  • Serve on a large ice cube and garnish with an orange peel

Gimlet

  • 2 oz (60 ml) Distillerie CDS Premium Gin

  • 3/4 oz (22 ml) Lime juice

  • 3/4 oz (22 ml) Cane sugar syrup

  • Shake on ice

Martini

  • 1 oz (30 ml) Dry French

  • 2 dashes of orange bitters

  • Shake on ice and garnish with a lime peel

  • 1/2 oz (15 ml) Cane sugar syrup

  • 2 oz (60 ml) Dry sparkling wine

  • 1 oz (30 ml) Elderflower liqueur

  • 1 oz (30 ml) Lime juice
